Hawksfold Gozney Pizza Wood is small-batch pizza oven fuel from our managed woodland on the Surrey–Sussex border, cut and dried specifically for Gozney-style ovens and other compact pizza ovens. From our woodland to your fire, it is the same ash hardwood we rely on for wood-fired cooking across the estate.
From our woodland to your oven
These 3kg boxes are filled with carefully selected ash from our own estate, grown in mixed, responsibly managed woodland a short drive from Haslemere and the South Downs. Each piece is cut down to a slender profile so it works beautifully in Gozney Dome, Roccbox and similar small-chamber ovens that need quick, responsive heat. Because we work at estate scale rather than factory scale, every batch is split, stacked and checked by hand in our barns.
Air-dried in our barns
Instead of rushing the process in a kiln, we air-dry our pizza wood slowly under cover in traditional barns on the estate until it reaches a reliably low moisture content for a clean, efficient burn. This slower approach protects the character of the ash, means less cracking and waste, and gives you predictably dry wood that lights easily with just a few kindling pieces. The result is a steady, controllable flame that brings a Gozney-style oven up to pizza temperature without drama.
Clean flame, proper pizza heat
Ash is a dense hardwood that catches quickly, burns hot and leaves a fine, light ash bed rather than heavy clinker, making it ideal for repeated pizza cooks. In a well-run oven you can expect bright, rolling flames, low visible smoke and the dry heat needed to cook a Neapolitan-style pizza base in minutes. Used with good fire management, a 3kg box is typically enough for a focused home pizza session, from heat-up through to your last few pizzas of the evening.
Sized for Gozney-style ovens
Every piece in our Hawksfold Gozney Pizza Wood box is cut short and slim so it sits comfortably in compact oven fireboxes and can be added little and often to maintain temperature. That means less wrestling with oversized logs and more control over your flame, whether you are firing a Gozney Dome in the garden or a small portable oven on the terrace. It is the same wood we use in our own pizza setups on the estate, from cottage terraces to outdoor suppers in the woodland.
